This course is designed to give the student an understanding of how various cultures and trends affect the development of food service styles, traditions and mixes in a modern multicultural society.  The student will become familiar with the demands of today’s food consumer and gain knowledge particularly with respect to changing nutritional and ethnic food choices.  Students will be exposed, through lecture, discussion and presentations to the cuisine, culture, feast making and geographical influences of the many countries that make up the Canadian cultural mosaic.
