Whether in leading edge restaurants, resorts or hotels, catering operations or product development kitchens, a rewarding career awaits the prepared and qualified individual who aspires to be a professional chef with management responsibility.

St. Lawrence College is a recognized leader in Ontario delivering this program, which combines a registered Apprenticeship with a Culinary Management Diploma. Lead by a team of dedicated chef professors who continue to work in the industry, the Culinary Management Diploma Apprenticeship Co-op offers the student a unique and exciting career path into the culinary profession by combining hands-on experience in the College’s training facilities with professional work experience in a paid placement and a registered apprenticeship.

This program will teach students all aspects of food production and preparation through demonstrations by culinary professionals, followed by continuous hands-on practice. More than 60% of your 2 year program is spent in the culinary labs, more than most culinary schools in the province. In addition, studies in the areas of business communications, kitchen management practices, nutrition, menu planning and applied computer skills will prepare students to successfully meet the demands of the industry as well-rounded graduates with technical and interpersonal skills.

Note: This program provides the complete in–school portion of the Level 1 and Level 2 Apprenticeship certification program.

Highlights

  • Students in this program will obtain the provincial Safe Food Handler Certification. 
  • Students are registered as an Apprentice with the Ministry of Advanced Education and Skills Development  
  • Assistance is provided to help secure paid co-op work placement for semester 3 
  • Placement hours are logged, by your designated employer for apprenticeship 
  • Upon successful completion of the program students are exempt from any further apprenticeship in-school training 
  • Graduates who complete the work requirements for their apprenticeship are eligible to qualify for Certificate of Qualification for Cook (Red Seal) 
  • Upon successful completion of the program, students are eligible for a Diploma

Barbados Exchange Program

A number of spaces will be available each year for students to complete the second year of their studies as exchange students at Barbados Community College. Students will pay St. Lawrence College tuition and will receive full credit for their studies in both institutions, earning a Culinary Management Diploma from St. Lawrence College and an Associate Degree in Applied Science – Culinary Arts from Barbados Community College. Add a year in Ireland: Graduates will be eligible to continue their studies in Ireland earning a Bachelor Degree in Culinary Arts. Three years, three countries, three credentials: an incredible start to your culinary career!

Admission Requirements

Ontario Secondary School Diploma (OSSD) with the majority of Grade 11 and 12 courses at the C, U or M level including the following prerequisites:

    Additional Information

    Programs at St. Lawrence College are delivered using a variety of instruction modes. Courses may be offered in the classroom or lab, entirely online, or in a hybrid mode which combines classroom sessions with online learning activities. Program delivery can be run weekdays, weekends or evenings. Upon registration, each full-time student is provided a St. Lawrence College email account which is used to communicate important information about program or course events.

    Advanced Standing

    High school students who have successfully completed a multi-credit (2 to 3 credits), grade 12 Hospitality program that includes any combination of the following credits, TFC/TFJ or TFR4E/C with a minimum overall average of 70% are eligible to receive advanced standing in St. Lawrence College Safety and Sanitation, CHEF 102. Once you have been accepted into your college program, contact your program coordinator for details.
